Nobu's specializes in fresh sashimi, and certain fish are flown in directly from Japan, such as Amber Jack (Kanpachi), Horse Mackaral (Aji), Japanese Red Snapper (Tai), and Traveler (Shimaaji). We never use frozen fillets!
